Corn & Sweet Onion Bisque

Paired with Gretchen Chenin Blanc 2023

Serves: 4-6
Prep Time: 15 Minutes
Cook: Time 25 Minutes

Ingredients:

  • 4 cups fresh corn kernels (or high-quility frozen)
  • 1 sweet onion, diced
  • 2 tbsp butter
  • 3 cubs vegetable stock
  • ½ cup light cream
  • Salt and white pepper

Method:

  1. Sauté onion in butter until translucent.
  2. Add corn and stock; simmer 15 minutes.
  3. Blend until smooth, reserving some kernels if texture is desired.
  4. Stir in cream; season gently.

Garnish:

  • Charred corn kernels
  • Microgreens or chives
  • Light sprinkle of smoke paprika

Wine Pairing Note:

The wine’s fruit expression mirrors the corn’s natural sweetness while its acidity keeps the finish clean and vibrant.
