Corn & Sweet Onion Bisque

Serves: 4-6

Cook: Time 25 Minutes
Ingredients:
- 4 cups fresh corn kernels (or high-quility frozen)
- 1 sweet onion, diced
- 2 tbsp butter
- 3 cubs vegetable stock
- ½ cup light cream
- Salt and white pepper
Method:
- Sauté onion in butter until translucent.
- Add corn and stock; simmer 15 minutes.
- Blend until smooth, reserving some kernels if texture is desired.
- Stir in cream; season gently.
Garnish:
- Charred corn kernels
- Microgreens or chives
- Light sprinkle of smoke paprika
