Leek & Potato Soup

Ingredients:
- 3 large leeks, white and light green parts only, sliced
- 3 Yukon Gold potatoes, peeled and diced
- 3 tbsp unsalted butter
- 4 cups chicken or vegetable stock

½ cup heavy cream
Method:
- Melt butter over medium heat; gently sauté leeks until soft, not browned.
- Add potatoes and stock; bring to a simmer.
- Cook until potatoes are tender (about 20 minutes).
- Blend until smooth; stir in cream.
- Season lightly with salt and white pepper.
Garnish:
- Crispy fried leeks
- Chive crème fraîche
- Drizzle of olive oil
