Light Seafood Choweder (Clam or White Fish)

Ingredients:
- 1 lb clams or firm white fish
- 1 leek, sliced
- 1 small fennel bulb, diced
- 3 cups seafood or vegetable stock
- ½ cup cream
Method:
- Sauté leek and fennel until soft.
- Add stock; simmer 10 minutes.
- Add seafood; cook gently until just done.
- Stir in cream; season lightly.
Garnish:
- Fresh dill or fennel fronds
- Lemon oil
- Cracked white pepper
