Light Seafood Choweder (Clam or White Fish)

Serves: 4
Prep Time: 20 minutes
Cook Time: 25 minutes

Ingredients:

  • 1 lb clams or firm white fish
  • 1 leek, sliced
  • 1 small fennel bulb, diced
  • 3 cups seafood or vegetable stock
  • ½ cup cream

Method:

  1. Sauté leek and fennel until soft.
  2. Add stock; simmer 10 minutes.
  3. Add seafood; cook gently until just done.
  4. Stir in cream; season lightly.

Garnish:

  • Fresh dill or fennel fronds
  • Lemon oil
  • Cracked white pepper

Wine Pairing Note:

The wine’s minerality and acidity complement the briny sweetness of seafood without overpowering it.
