Pumpkin & Ginger Soup

Cook Time: 30 minutes
Ingredients:
- 3 cups pumpkin purée
- 1 shallot, minced
- 1 tsp fresh ginger, grated
- 3½ cups vegetable stock
- ½ cup cream or coconut milk
- Salt to taste
Method:
- Sauté shallot and ginger until fragrant.
- Add pumpkin and stock; simmer 20 minutes.
- Blend until smooth; finish with cream.
- Season lightly.
Garnish:
- Crème fraîche swirl
- Candied ginger
- Chive oil or fresh chives
