Pumpkin & Ginger Soup

Paired with Gretchen Chenin Blanc 2023

Serves: 4-6
Prep Time: 15 minutes
Cook Time: 30 minutes

Ingredients:

  • 3 cups pumpkin purée
  • 1 shallot, minced
  • 1 tsp fresh ginger, grated
  • 3½ cups vegetable stock
  • ½ cup cream or coconut milk
  • Salt to taste

Method:

  1. Sauté shallot and ginger until fragrant.
  2. Add pumpkin and stock; simmer 20 minutes.
  3. Blend until smooth; finish with cream.
  4. Season lightly.

Garnish:

  • Crème fraîche swirl
  • Candied ginger
  • Chive oil or fresh chives

Wine Pairing Note:

Ginger highlights the wine’s citrus edge, while pumpkin’s sweetness harmonizes with Chenin Blanc’s stone-fruit character.
