South African Vetkoek Filled with Minced Curry

A cherished South African classic—golden, soft Vetkoek filled with warmly spiced minced curry. A
celebration of flavor and heritage

Ingredients - Vetkoek Dough:

  • 5 ½ cups cake flour
  • 2–3 Tbsp sugar
  • 2 tsp salt
  • 1 packet yeast (2 ¼ tsp)
  • 2 cups lukewarm water

Ingredients:

  • 1 lb minced meat
  • 2 Tbsp canola oil
  • 1 onion, sliced
  • 1 tsp ground ginger
  • 1 ½ tsp minced garlic
  • 2 tsp curry powder
  • 2–3 tomatoes, chopped
  • ½ tsp paprika
  • 2 cups diced potatoes
  • 1 cup peas and carrots
  • ½ tsp white pepper
  • ½ tsp hot sauce or cayenne pepper (optional)
  • 2–3 Tbsp parsley or cilantro
  • Salt to taste

Instructions:

  1. Prepare the Curry Filling:
    1. Sauté oil, onions, garlic, ginger, curry powder, and paprika for 2–3 minutes.
    2. Add tomatoes, cook 3 minutes, then add potatoes, minced meat, cayenne, and white pepper.
    3. Simmer for 15 minutes until potatoes are tender.
    4. Add peas, cook 2 more minutes, finish with parsley. Season to taste.
  2. Make the Vetkoek:
    1. Mix yeast, sugar, salt, and lukewarm water. Let rest 5 minutes.
    2. Add flour and form dough. Let rise 1–2 hours until doubled.
    3. Knead lightly, roll to 1-inch thickness, cut shapes.
    4. Fry in 350°F oil for 3–5 minutes until golden.
    5. Slice open and fill with curry. Serve warm.
